Named for the nearby Mount Blanca, White Mountain Farm sits in an ancient lakebed known as the San Luis Valley. Family-operated since the 1930s, the farm focused on organically grown wheat and alfalfa and sheep in the late ’70s and early ’80s. In 1984, they started experimenting with quinoa, the “mother grain” of the Incas. In 1987, they became the first large-scale quinoa operation in North America, and now grow certified organic, high quality quinoa, potatoes, rye, and vegetables.

The Lippis family settled in Colorado’s Florence area in the early 1890s, when it very much resembled the Abruzzo region of Italy from which they’d moved. In the early 1930s, Rocco Lippis and his son, Tony, began planting crops on the land, and in 1940, Tony and his wife Mary built the present day Lippis Farm. Certified organic since 1999 and deemed the 2008 Colorado State Farm of the Year, Lippis Farm now stands at 1000 acres. It is the only full scale, producing farm to survive the changes in culture and urban sprawl of Fremont County—and the state’s only producer of organic cabbage!
